The AVR Butterfly
Microprocessor Project and Demo
The Atmel AVR Butterfly board is a microcontroller demo board that has a lot of onboard stuff including LCD display, etc. It is under $20 and can be programmed to do almost anything you can think of that will fit into a 16K micro. It has a serial interface and can be programmed using free software from your pc with a serial cable.

To make it much easier to build into a project, a carrier board with compatible connectors for the Butterfly and prototyping area for your added circuitry makes it much easier. I was considering making one myself, but I found one:
